Recently I had one of those rare days when I had no reason to leave the house, with a gentle rain falling outside—a welcome excuse to stay in.
I took a break from organizing, stepped into the kitchen, and made myself a simple indulgence.
Not a complicated dessert. Not three layers, a sink full of dishes to wash, or leftovers calling my name for the next four days… because that is difficult to resist. I simply wanted a bite of luxurious chocolate.

This little recipe has become one of my favorite go-to treats when I want something homemade without turning the kitchen upside down. It comes together in minutes, uses simple pantry ingredients, and is just enough to satisfy the craving.
It is a dessert that doesn’t ask for an occasion. Just a quiet moment, a chocolate craving, and a few minutes to yourself.
There’s a reason so many people turn to chocolate when they need a lift. Beyond the flavor, chocolate has long been tied to comfort, celebration, reward, and nostalgia. A bite of chocolate can bring back memories of holidays, family kitchens, birthday cakes, or the small treats that marked happy moments growing up.
Dark chocolate, in particular, carries a richness that feels a little more grown-up—less sugary, more satisfying, and deeply comforting in its own way.
It also contains naturally occurring compounds many people associate with improved mood and a sense of well-being. In moderation, dark chocolate offers antioxidants and has been linked to heart health benefits as part of an overall balanced lifestyle. No dessert can solve every problem, but there is real comfort in small pleasures.

I first created this recipe years ago when I was a nurse working long shifts and raising four children as a single mom.
Those were busy, demanding years. By the end of the day, everyone needed a little comfort in their own way.
The kids were perfectly happy with a bowl of ice cream.
I wanted something richer.
Something warm, decadent, and satisfying—but quick enough to make in the middle of real life.
So I started experimenting in the kitchen, pulling together a few ingredients until I landed on something that felt like a reward at the end of a hard day.
That chocolate creation has stayed with me through the years. I’ve tweaked it a little here and there along the way until, for me, it has ended in near single-serve chocolate perfection.
Where My Love of Baking Began
I got my love of baking—and experimenting in the kitchen—from my grandmother Mitchell.
Our family would line up for her yeast rolls. They were the kind of homemade goodness we still talk about.

She loved sharing that world with me. We spent many days in her kitchen together, with me taking copious notes while watching, helping, and trying to keep up.
And she never used a recipe.
It was always a little of this, a pat of that, and a sprinkle of something extra that made it just right.
There were no measuring spoons lined up on the counter. Just instinct, experience, and the kind of confidence that comes from doing something with love for many years.
I learned early that cooking is part skill, part memory, and part heart.
One of the best things about creating recipes is passing them along—to family, to friends, or to someone who could use a little sweetness at the end of the day.
That’s how food becomes more than food. It becomes connection. And watching someone enjoy something you create is its own kind of reward.
This recipe carries that same spirit—simple to make, rich in flavor, and easy to share.
Dark Chocolate Melt Away
A rich, single-serve dark chocolate dessert
Ingredients (my favorite brands are listed in parentheses)
1/4 cup all-purpose flour (Caputo 00 Baking Flour)
2 tablespoons unsweetened cocoa powder (Ghirardelli Majestic Dutch processed)
1 tablespoon raw cane sugar
1/4 teaspoon baking powder
Pinch of sea salt
1/4 cup unsweetened coconut milk (Embé)
2 tablespoons unsalted butter, melted
1/4 teaspoon vanilla bean paste—or vanilla extract
2 Dove dark chocolate squares with almonds, chopped
These are simply the products I enjoy using in my own kitchen. Feel free to substitute with your own favorites or whatever you already have on hand.
Directions
Grease a 12 oz coffee mug or small baking dish with coconut oil.
In a small bowl, whisk together flour, cocoa, sugar, baking powder, and salt.
Add coconut milk, melted butter, and vanilla. Stir until smooth.
Fold in chopped chocolate.
Transfer batter to prepared mug or dish.
Microwave 60–90 seconds, until the center is set. Cooking time may vary depending on the strength of your microwave. Begin checking at 60 seconds by lightly tapping the top of the dessert. If it is fully set, it’s ready.
Let cool slightly. Best enjoyed warm.
Optional Toppings:
Whipped cream - homemade is always so much better.
Cream cheese topping
Ganache (email me for my recipe!)
Vanilla Bean Ice cream
Or plain and warm—just as it is
Not quite a cake, not quite a brownie—more like a rich, torte-like dessert with a dense, velvety texture.
So take a moment, grab a spoon, and melt away your day.
The Ghirardelli Majestic cocoa is one of those ingredients I happily splurge on. A little goes a long way, so one container lasts quite a while. It brings a bold chocolate flavor, a deep dark color, and a higher cocoa butter content that gives desserts and even hot cocoa a rich, smooth finish.
