Parmesan Spinach Bites

Parmesan Spinach Bites are a savory, buttery twist on my grandmother’s classic spinach and egg recipe—perfect for parties, gatherings, or anytime you need a flavorful bite-sized appetizer. These crispy, golden-brown spinach bites are packed with parmesan, seasoned croissant crumbs, and a touch of spice for just the right amount of kick.

Baked until firm and lightly crisp on the outside, they are an easy, make-ahead option that guests love. The combination of spinach, rich butter, bacon fat, and warm seasonings creates a deep, satisfying flavor, while the croissant coating gives them a light, flaky crunch.

Serve them warm for the best texture, and watch them disappear quickly! Makes about 30 bites—though you may want to double the batch!

Ingredients

  • 2 packages spinach (frozen, chopped; 10 oz pkgs)

  • 6 tbs butter - softened

  • 5 tbs bacon fat

  • ~3 croissants (better if a little stale), crumbled fine and mixed with 1 tbs Roasted Garlic and Herb seasoning with sea salt - I use Weber brand

  • 1 c fresh grated parmesan cheese

  • 4 large eggs

  • 1/2 tsp fresh ground black pepper

  • 1/4 tsp fresh grated nutmeg

  • 1/4 tsp cayenne pepper - little more if want more heat

  • 1 tbs dried minced onion

  • 3 additional croissants crumbled fine without herb seasoning - set aside

Preparation

Preheat oven to 350 degrees.

Cook spinach following the package directions. Drain the spinach in colander, pressing - it will be hot, so use a small bowl or cup) to squeeze out as much of the water as possible.

In a large bowl, combine the warm spinach with the softened butter and bacon fat. Add the seasoned croissant crumbs, parmesan cheese, and minced onions. Mix well. Add pepper, nutmeg, and cayenne. Mix thoroughly.

In a small bowl whisk the eggs lightly and add to the spinach mixture and mix well. Chill mixture (covered) for 30 min in refrigerator.

Line two baking sheets with parchment paper. Using a cookie scoop, shape the spinach into balls. Roll in the plain croissant crumbs until lightly coated.

Arrange the spinach bites on the baking sheets. Leave about 1/2 inch between each ball. They do not spread.

Bake for ~20 min, or until crumbs are lightly browned and they feel set to the touch.

Remove from oven. Rearrange away from the oil that has cooked out. Allow to cool on cookie sheet before transferring to serving dish.

Makes about 30 bites
